I had already come across the brand at events and I had noticed their desire to better serve chefs. We are looking for clothes that are made with a real thought for the cook as much in terms of style as comfort.
According to Pieter Riedijk, it is very important today to consume intelligently, to make people understand that there are short circuits, that you can find plenty of products around you and to respect the seasons. To this larder that nature offers him all year round, Pieter adds handpicked products to his plate, to pay homage to the magnificent work of the local producers that he likes to meet as soon as he can.
After a few trips back and forth between Holland and France, and several trips to Asia in Singapore, Thailand and Malaysia, Pieter Riedijk started working with Philippe Labbé at the gastronomic restaurant La Chèvre d’or in one of the most beautiful hotels on the French Riviera, in the village of Èze. He then followed his mentor to open the Shangri-La in Paris in 2009. But the city “is not his cup of tea”, he misses the alpine nature, which quickly leads him to Megève at the Flocon de Sel, where he joins the team of Emmanuel Renaut, three-star MOF. Pieter Riedijk continued his ascent at the two-star MICHELIN restaurant at K2 Altitude – of the five-star hotel in Courchevel 1850, his eyes riveted on the peaks that he sees from his kitchen.
