Meeting with our brand ambassador, Nina Métayer, a young talented pastry chef who is always looking to innovate in her creations. We entrusted him with the mission of making a pastry using flax, a key ingredient in our collection.

Always ready to take up a challenge, Nina Métayer has declined flax in all its forms by proposing a subtle mix of a crunchy cookie with flaxseed, topped with a caramel and a cream infused with jasmine tea and flax. A delight for the taste buds as well as for the eyes with this nougatine tile finish made of flax seeds.

About Nina Métayer

After a childhood in La Rochelle, Nina Métayer trained as a baker and worked in Australia. Back in France in 2010, she learns pastry at the Ferrandi School, where she graduates first in her class, before joining Yannick Alléno at the Meurice, in the brigade of pastry chef Camille Lesecq. She continues her rise at the Raphael Hotel alongside Amandine Chaignot. A finalist on the show “Who will be the next great pastry chef” on France 2 in 2015, she entered the ranks of Jean-François Piège, who earned two Michelin stars in just six months. At 29, she now expresses her talent in a Franco-Russian way, at the Café Pouchkine as the head of sweet creations for the world.

Nina Métayer is probably one of the most influential pastry chefs of her generation. After training at such great houses as Le Meurice, Le Grand Restaurant de Jean-François Piège and the Café Pouchkine, the thirty-year-old opened her digital pastry shop, Délicatisserie, in 2020.
