Het is de beurt aan Anthony Bonnet, de jonge sterrenkok, om zijn mentor uit te nodigen in de keukens van de Cour des Loges, een 5-sterrenhotel in Vieux-Lyon. Wij delen dezelfde waarden en het is dan ook niet meer dan normaal dat wij deze twee getalenteerde chef-koks hebben voorgesteld hun knowhow en ervaring te combineren om een recept op basis van vlas te cre\u00ebren. Elk van de chef-koks nodigde ons uit om hun producenten te ontmoeten en hun visie op productuitmuntendheid te delen. Onze ochtend begon met een korte wandeling in Bresse met Philippe bij een Bresse pluimvee fokker vergezeld door Nicole Collet (Au Chapon Bressan). Op deze prachtige boerderij ontmoetten we zeer goed verzorgd pluimvee. Hij is een liefhebber van het land, de producten en hun mooie verhalen.
